What I ate today

I don’t know about you but I’m currently watching ‘What I ate today’ videos non stop. As you know from my previous rambles I’ve changed my diet and have become a high carb, low fat vegan. This wasn’t on purpose but more for health, convenience and the good of the planet, (let me just straighten my halo).

High carb vegans eat around 3,000 calories per day purely from fruit and veggies. Who wouldn’t want to eat ice cream for breakfast, lunch or dinner and enjoy as many chips as you want?! The key to this lifestyle is getting enough calories from fruit and veg that you don’t crave sugar or fat. All those calories give you so much energy and fuel your workouts to make you feel amazing.

So here is an example of what I munch on an average day being a high carb vegan and loving it!

Breakfast ~acaibowl

My love for breakfast is insane. I often go to bed looking forward to breakfast and thinking about what I will have, and why wouldn’t you if you knew you could have a big bowl of nice cream! Nice cream is vegan ice cream made from fruit, usually bananas. You can find out more about it in my last post. 

Adding a tablespoon of Acai powder to my morning banana nice cream gives it a superfood boost that tastes delicious.

Lunch ~fruit

For lunch I eat as much fruit as possible, usually consisting of whatever I have lying round chopped or blended. Fruit is really filling and when ripe contains more sugar to keep pesky cravings at bay. If you want to start eating clean or vegan explore the supermarket aisles for alien looking fruit that you’ve never tried. You may just find a gem that you love.

Mono-meals are also really handy for when you’re at work or on the go. Simply eat a lot of one fruit like 5 mangoes or a large box of strawberries, you’d be surprised how tasty and filling it is.

Dinner ~

Dinner time is usually a massive carb fest for me, either a plate full of fat free chips, brown rice or gluten free pasta fills me up. Potatoes are a major source of carbs for hclf vegans and are healthy vitamin filled veggies if not deep fried or smothered in oil. To make them fat free simply part boil/steam and sprinkle in herbs before finishing in the oven. No oil needed!

Holland and Barrett do great food ranges, I get my pasta and sauces from them when I want a quick but healthy dinner.
